RAW ZUCCHINI PASTA


Paul and I have been dabbling in a Raw Food diet off and on for the past couple of years but didn't seem to make it past the 75 to 80% line until 6 months ago and now eat 90% raw most of the time.  The benefits of having Green Smoothies and a Raw Diet are awesome although I must say we do slip back into eating cooked evening meals when the weather is cold (we are working on that one).  I really don't think Paul could survive the CRAZY hours he works without it.

I have seen different recipes for "Raw Zucchini Pasta" many a time but just didn't have the inclination to make it until seeing it here the other day.  My preference is for less garlic and a bit more  of a bite to it, so I made some modifications to suit us.


Pesto Sauce
1 cup basil
1/4 cup raw cashews
1/4 cup Olive Oil
2tblspns Pepita Seeds
1 small clove garlic
1/2 chilli
(blend until smooth)

3 med zucchini's
(thinly peel the zuchinni's with a serrated peeler, discarding the outer skin)

Scoop zucchini  into a bowl and top with Pesto Sauce.  I then added chopped sundried tomatoes, chopped fresh tomatoes, chopped avacado, olives and top with a spoon of Salsa Sauce.

We served ours with a salad and Home-made bread (I know it's not raw but it is so delicious).

If you have ever thought of trying a "Raw Food Dish" give this a try as it really is delicious.

I found your blog, by reading through the comments on Bluebirdbaby, and I just wanted to pop in and say that I love reading your blog, I love the things you choose to write about, thanks for sharing. What caught my eye in your comment on Bluebirdbaby, was you said something about agave nectar not being the health alternative we all thought it was, and It got me curious, only because I love learning about food and health, and I had never heard this yet, so I thought maybe you could enlighten me?

    I only started hearing controversial information in regard to Agave Nectar recently so until I have done some more research or find out one way or the other I am not using it which is very disappointing as I prefer the taste to honey.

  3. Hey thank you for the link. Very very helpful, a place to start researching! It makes me sad too because I prefer the taste to honey as well. I also use maple syrup which I like as much as agave nectar. That is awesome that yall are living your dream, go you! Hopefully one day we will get there. Lots of steps, moving that direction as much as we can :) Love your blog!
