A thousand answers came to mind when Jordan came out of his room after dressing himself in his swimming gear and promptly told me he was going swimming. Yes it is the middle of winter, yes he has just been sick and just because the sun is out doesn't mean it is warm, in fact it is really cold out there but I kept all these thoughts and more to myself, stepped back and said "Sweetheart, you might want to put your foot in the pool first, just to see how warm it is".
Needless to say, there wasn't any swimming done nor did I actually see any toes go in the pool to test out the water. There was lots of playing with dinosaurs in the trees though for about 15 minutes before coming inside and telling me he was cold!! This time we dressed in clothes suitable for winter!!
Once warm and cozy we got busy with making our gingerbread men and a couple of dinosaurs which made a delicious afternoon tea with a nice cuppa! This recipe is made with honey rather than sugar and is delicious although probably not your typical authentic gingerbread and you do have to put the dough in the fridge for a couple of hours before cutting them out and cooking but in my opinion well worth it. As you can see from the photo's we also added chocolate rather than icing for the face and buttons - mmmmm . If anyone is interested you can find the recipe here - they are called Honey gingerbread cookies.
