Banana Cake and Muffins

The lady we get our fruit and veggies from is just delightful and is always giving us little treats and presents so before heading off this weekend, I made her a little treat - Banana/Coconut Cake topped with home-made Raw Chocolate. Whilst making the cake, I made a little extra for muffins.
I am told the recipe is delicious, but as I don't eat banana's I just make it for everybody else. Ingredients 125g butter 4 banana's 1/2 cup honey 2 tblspns milk 220g flour (I use W/M Spelt) 1 tspn Bi-carb Soda 25g Coconut 1 tspn Baking Powder 2 eggs Raw Chocolate/Dark Chocolate for decoration Method Cream the butter and honey together until soft and creamy. Add the whisked eggs and mashed banana's. Dissolve the Bi-carb soda in the boiling milk and add to the creamed banana mixture. Sift flour & Baking Powder together then gradually add to mixture. Add the coconut. Bake in Moderate Oven (180deg) for approx 25 to 30 mins. Melt chocolate and spread over the top of cake. A little while ago I made up a batch of Raw Chocolate - I made it with the whole packet of Raw Cacao Butter which was way way too much....... mmm not even I can eat that much chocolate :-) So the outcome has been a real blessing, I have a bowl of hard chocolate sitting in the pantry that I just scrap off as the need arises and melt in a bowl - perfect for topping cakes. You can find the Recipe for the Raw Chocolate under my Recipes Tab. I used an American Brand of Cocoa called "Cocoa Mojo" made by Ennerhealth. Unfortunately it isn't available here in Australia but it is delicious. We met the founders of Ennerhealth in Vilcabamba, Ecuador whilst over there and they have such a wealth of knowledge between the two of them as well as being really nice guys - check out their website, it is full of amazing information.
