By Friday night I am usually so tired and last night was no exception to the point where we got take-away Indian food which is a definite rarity these days (mainly because of the consequences of eating out and feeling horrible from whatever goes into the "food").
Anyway whilst Paul was out getting takeaway, Jordan really wanted to make biscuits (he had been asking all day and we just didn't seem to get around to making them). He kept at me and at me as only children can do and I have to say I was very close to having my own little meltdown, in the end, I did what I tell Jordan to do all the time, took 3 deep breaths and asked myself who do I want to be at this moment - the answer to that got me up and out of my chair and we made biscuits. I have to say that getting up and making the effort and seeing the delight on Jordan's face was well worth the effort with the bonus side effect of giving me more energy and feeling oh so much better. The Pirate Mittens got another workout which warms my heart to know how much Jordan loves and appreciates them.
This morning we put melted raw dark chocolate on top and will be taking some to the lady at the fruit market.
These biscuits are delicious and is one of the first recipes I converted from a sugar based recipe to a honey based recipe back in the early days of deleting processed sugar from our diet. They are one of our favourites and they get made all the time. It is a very easy and quick receipe which is an added bonus.
Honey and Cinnamon Biscuits 2 cups Organic Spelt Wholemeal or Wholemeal Flour 1 tblspn Baking Powder 1 tblspn Organic Cinnamon 1/2 cup Organic Coconut (optional - if not using Coconut only use 1/2 cup milk) 1 dspn oil (I use Flax or Olive Oil) 1/4 cup Raw honey 1 cup milk (I use Goats Milk) 1 egg
Mix the four, Baking Powder & Cinnamon together. Mix in the oil, honey, milk and egg until all ingredients have been moistened completely. Add extra milk if required.
Place tspns of mixture onto a greased Baking Sheet leaving space between each drop.
Bake in a High Oven (200 deg) for 10-12 mins or until golden brown.
